This super simple, healthy, no-fail, three ingredient Easy Brown Rice with Cumin recipe will be your new go-to side dish to pair with anything from grain bowls to tacos.
Ingredients
Rice:
- 1 1/2 cups short grain brown rice, uncooked
- 2 cups prepared vegetable broth
- 1 1/2 cups water
- 1 teaspoon cumin seeds
Garnish (optional):
- 1 tablespoon chopped parsley or cilantro
Instructions
- Place rice, vegetable broth, and water in a pot, cover, and bring to a boil.
- Add cumin seeds and stir well. Reduce heat to medium, cover and cook for about 40-45 minutes, until liquid is absorbed and grains are tender yet firm. Alternatively, use a rice cooker, Instant Pot (see below), or slow cooker (see below) to cook rice.
- Garnish with chopped parsley or cilantro, if desired.
- Makes 6 servings (about 3/4 cup each).
Notes
Instant Pot Directions: Place all ingredients except parsley or cilantro in the container of the Instant Pot. Press “Rice” setting. Cook according to manufacturer’s directions. Serve immediately.
Slow cooker Directions: Place all ingredients except parsley or cilantro in the container of the Slow cooker. Cook on high for 4-6 hours or on low for 8-12 hours. Cook according to manufacturer’s directions. Serve immediately.
May use vegetable broth instead of bouillon cubes; use 2 3/4 cups water + 4 cups vegetable broth in this case.
