The English Breakfast tradition of hearty beans in tomato sauce served with baked tomatoes and toasty bread is so welcome! Every time I’m in England, I am enamored by this delicious food custom. Though it often includes sausage, it’s quite easy to skip out on that animal protein and make the meal completely vegetarian—essentially vegan meal.

In this 100% plant-based version of a full English Breakfast, the breakfast plate is filled with an array of plant foods: toasted whole wheat English muffins, canned beans in tomato sauce (a true English Breakfast uses canned beans in tomato sauce, but if you can’t find them substitute canned vegetarian baked beans), crispy, seasoned baked tomatoes and mushrooms, and avocado slices. Now those avocados are my own California contribution, and I think they suit the plate quite well. My English friends remind me that the American version of “English Muffins” doesn’t exist in England. But they suit this plate perfectly. You can also add veggie sausage links to the plate, if you like. Make it gluten-free with a couple of tweaks. This is also a wonderful meal for “breakfast for dinner”. Balanced in protein, carbs, and healthy fats, you can get it on the table in under 20 minutes with only 10 ingredients (not including pantry staples).

Baked Tomatoes & Mushrooms:

Beans, Muffins, Accompaniment:


  1. To prepare Baked Tomatoes & Mushrooms: Preheat oven to 400 F. Place halved tomatoes in a small baking dish, cut side up. Place whole mushrooms in the dish. Drizzle the tomatoes and mushrooms evenly with olive oil and vinegar. Sprinkle with breadcrumbs, seasoning salt, black pepper, and parsley. Place in oven and bake for about 15-20 minutes, until lightly browned on surface, but still firm.
  2. While tomatoes and mushrooms are cooking, prepare the remaining ingredients.
  3. Heat the baked beans in a microwave in a microwave safe dish, or over the stove in a small pot.
  4. Toast English muffins.
  5. Arrange the ingredients onto each plate (makes two servings):
    • One baked tomato half
    • Half of the baked mushrooms
    • 1/2 cup vegetarian beans in tomato sauce (transfer to a small dish and place on plate)
    • 1 toasted English muffin
    • 1/4 sliced avocado
    • 1 lettuce leaf

Notes

May serve with margarine and jam, if desired

A true English Breakfast uses canned beans in tomato sauce, but if you can’t find them substitute canned vegetarian baked beans.
